VINIFICATION
The hand-harvested Monastrell grapes, Cabernet Sauvignon, and Syrah is doing through a strict selection in the vineyard. Maceration in the cellar is supervised to reach the ideal wine profile. During the entire process, a pumping down technique pigeage is used, which the extraction is slower and favors more the synthesis of varietal aromas. The fermentation temperature is strictly controlled with a maximum of 28ºC to extract the full potential of the grapes.

AGEING
12 months in new French and American oak barrels.

TASTING NOTES
Intense, clean, and bright reddish color. It has high aromatic complexity with hints of ripe black fruit, blackberry, plum and that are enveloped by the spicy, sweet, and balsamic notes of the wood. Soft, wide, and voluptuous on the palate.

FOOD PAIRING
Grilled meats, stews, legumes, and cured cheeses.
